Happy Valentine’s week! Valentine’s Day has always been one of my favorite holidays. I still remember passing out Valentines at school and then opening them up with my twin sister when we got home. So many fun memories! H and I put together his Valentine goodie bags for school this past weekend and it was so special. We had soooo much fun.  He was super proud of himself with how fast he was able to write all of his classmate’s names. It was the cutest! On Friday I am volunteering at his class party and to say I’m excited is an understatement. I seriously cannot wait to see all the festivities in action. I’m kicking off this week with a new recipe that is perfect for Valentine’s Day! This Strawberry Shortbread Crisp is a blend between a shortbread cookie and a fruit crisp. If strawberries aren’t your jam then you can swap them out for any fruit you like. I used strawberries because they remind me of Valentine’s Day more than any other fruit. Dessert is a must on Valentine’s Day and this one is not only delish but it’s healthy too. It’s Grain-Free, Gluten-Free, Lectin-Free, Sugar-Free, and Keto! It’s perfect topped with slightly sweet coconut whipped cream but would also be delish with a dollop of ice cream if you aren’t worried about a little sugar. My Only Goal For 2020: Meditation

My January 1st starts today!  I fully unplugged the entire two weeks H had off of school and then enjoyed his B-Day celebration the last few days.  I really lived in the moment and it was wonderful!  Honestly, I always struggle with this time of year and it has been super hard getting back into the swing of things.  Slowly but surely I am getting back into the groove. Setting New Years’ goals at the beginning of the year is something I no longer do.  I have moved to a mindset of “always be ready” vs. kicking off the new year with goal setting. But, there is one goal I am setting for myself in 2020!  To meditate daily. Meditation has been part of my life for a long time but for some reason, I struggle to make it a daily practice. This year I am more determined than ever to meditate every day without fail.  Even if it’s only for 10 min a day. Why meditate? Well, there are so many reasons. And, if you need science to convenience you here you go. Several studies show meditation, even for a short time increases alpha waves (alpha is the resting state of the brain) as well as leads to a decrease in anxiety and depression.  At Harvard Medical School they used MRIs to monitor study participant’s brain activity while they were meditating. They found during mediation the area of the brain which controls the autonomic nervous system (the part of the nervous system responsible for the control of bodily functions not consciously directed) was activated. Given this information, it makes sense that meditation would help manage stress and reduce stress-related diseases. Meditation has proven benefits and I can’t tell you how many people in the leadership, self-development space I follow swear by it as the one thing that changed their lives FOREVER! I don’t have to be sold on how amazing mediation is I just need to actually do it and stick to it once and for all. This year I’m making it my number one priority! Citrus Shortbread Cookies (Lectin, Gluten Free, Grain Free, Keto)

H has been begging me to make lemon cookies!  I made some last Christmas and they were his absolute favorite.  I have tried to remember how I made them and have turned up empty-handed.  So, I decided to create a new lemonish cookie this year. These Citrus Shortbread Cookies not only contain lemon but orange too!  This citrus combo along with French butter is pure perfection! I used only lemon and orange but you could easily add lime and I can guarantee it would be a great addition. If you prefer to focus on just one citrus flavor then use the juice and zest of your favorite.  You honestly can’t go wrong!  I love recipes where you can customize to your liking and this one allows you to do just that. Also, you may be asking why French butter?  Well, for a few reasons.  It’s delish number one!  But, the main reason is it is lectin free.  So, if you are following a lectin free protocol be sure to use French butter.  Otherwise, good old Kerry Gold or another pasture raised butter is perfect. To ensure a nice round shape scoop dough into your hands and roll in a ball.  Then place on a cooking pan and use a fork to create the top texture and flatten slightly. You can also roll out the dough and cut into your desired shape or use cookie cutters.  This method with give you a more crisp shortbread. Once cookies are out of the oven allow to cool and then give them a dusting of powered sweetener. These are sure to become a favorite! Maple Butter Cookies (Lectin Free, Gluten Free, Grain Free)

It took me awhile to come up with a name for these cookies.  I was hoping for something better but I settled on Maple Butter Cookies.  Not as exciting as I hoped but it works! Two of the main ingredients as you probably guessed are butter and maple syrup.  There is only 1/2 cup of maple syrup for this recipe so while these cookies are not one hundred percent sugar free the sugar in them is coming from an unrefined, whole source. And, if you do the math there is only around 2 grams of sugar per cookie. Still low if you ask me! The maple syrup not only adds to the texture of these cookies but the flavor as well.  If you want these to be Keto and one hundred percent sugar free you could swap out the maple syrup with something like Lakanto’s maple flavored sugar free monk fruit syrup.  I personally like the idea of good old fashion maple syrup but you can make the call. These cookies are soft and so yummy!  I mean you really can’t go wrong with butter and maple syrup can you? I hope you enjoy this recipe and if you try subbing Lakanto’s syrup for the maple syrup I would love to hear how it worked!  In the meantime happy cookie making! Almond Sugar Cookies (Lectin Free, Keto, Gluten Free, Dairy Free)

My favorite cookie as a kid and still my favorite today is a simple sugar cookie. These Almond Sugar Cookies are like the classic but with a touch of almond extract. They are the fastest to whip up of all the cookie recipes I’m sharing this week and are fail proof! Instead of butter or coconut oil, I chose sustainable palm shortening for the fat in these cookies. I wanted a neutral flavored fat so that the almond flavor could shine through. I also wanted a crisp yet, slightly soft sugar cookie. Palm shortening won among the other fats I tried hands down. When choosing palm shortening it’s important to ensure you are purchasing a brand that supports sustainable practices. If you purchase from Whole Foods, your local Co-Op or another health food type of store it’s probably a safe bet that you will find only brands that align. However, an easy way to be sure is to look for a stamp that says, “Rainforest Alliance Certified”. I am a fan of Nutiva or Spectrum. To top these cookies I chose to dip them in a granulated erythritol monk fruit blend. However, to make them more festive you could use sprinkles or even top with a little buttercream icing. To achieve the perfect edge and shape I used the following technique: Use a cookie scoop to scoop the dough into your hand. Then, roll the dough gently between your hands to create a ball. Next, dip one side in granulated sweetener and place on a cookie sheet. Use the back of a glass press and flatten the cookie to about 1/4″ thickness. The sweetener keeps the top of the cookie from sticking to the glass. If you find that it sticks just dip the bottom of the glass in granulated sweetener before pressing and flattenigh the cookie.  Problem solved! These cookies rise to the top of all the recipes I created for Christmas this year. They are easy to make, simple, and delish! Salted Triple Chocolate Cookies (Lectin Free, Keto, Gluten Free, Sugar Free, Grain Free)

Calling all CHOCOLATE LOVERS! It’s not Christmas without a little chocolate right? If you are a chocolate lover then you are going to love these Salted Triple Chocolate Cookies. They contain 100% cacao chocolate, cacao powder, and cacao nibs which I like to call nature’s chocolate chips! I consider chocolate a health food. However, it’s important to make sure the dark chocolate you select is not filled with additives like milk, soy lecithin and a lot of sugar.  If you want these cookies to be completely sugar free then select a 100% cacao bar.  To go light on the sugar I recommend 72% or lower.  The higher the percent of cacao the better! You might be asking what is so great about chocolate. Well, let me tell you! Chocolate is overflowing with antioxidants, minerals, and healthy fats. With 3 sources of high-quality chocolate, these cookies really pack a nutrient punch. In addition, they have a small sprinkle of Maldon sea salt on top. Any salt can be used but Maldon looks beautiful and is the perfect contrast against the dark brown color of these cookies. It also gives a little crunch. These cookies are Lectin Free, Gluten Free, Grain Free, and Keto. After baking a few batches I found that if you prefer a flatter less crumbly cookie you should slightly flatten these before baking. They will spread a bit so don’t flatten too much. Just a touch seems to be perfect.  If you like a more crumbly, puffier cookie then just scoop onto your cookie sheet, top with salt and pop in the oven. I hope you enjoy these as much as I do! It's been a while. I hope summer was amazing for a It's been a while. I hope summer was amazing for all of you. We had a very busy but good summer. 

Sadly, in July, we had to say goodbye to our sweet Luna. It was one of the hardest things I have ever done. Not doing what was right for her, but just getting to that moment. I kept wondering how I was going to get through it? What would it be like? I did not want her to suffer, and I had no idea how I would know when it was time. But I did. Getting to that point was awful. But being by her side when it was time to say goodbye was oddly easy. It was a relief. Luna was my first pet (besides two hamsters after college 😂) and she was so special. She will always be special. Pets are such a blessing in our lives. I definitely feel blessed we had Luna as long as I did. She was almost 14! 

Seeing H go through losing Luna was hard. He loved her, but at the same time, only really knew her as an older dog. We had talked a bit before Luna passed away about whether or not we would get another dog. He really wanted one, and I did too. I thought I would not be ready for a while. We originally thought next spring, but the house felt so empty after Luna was gone. So guess what?

We welcomed a new corgi puppy home a week ago. It's crazy how we found her, and it happened really fast, but she is perfect for our family, and H is having so much fun with her. And she is a red headed tri-color just like Luna! We found her in South Dakota, so H and I took a little road trip to pick her up. She was born as a single puppy with no littermates. H thought that was super cool when we found out and said, "My new dog is an only child too." Anyway, life just got a little crazier but in a good way! This is one of my last pictures of the three of us and I just love it. She had a good day lounging in the sunshine and so did we.🤍

Have a ton of random veggies in your fridge? My fa Have a ton of random veggies in your fridge? My favorite way to make sure I don’t waste leftover veggies is the roast them with a little olive oil and any seasoning I’m feeling in the moment. 

▫️INSTRUCTIONS▫️

-Preheat oven to 425°F.
-Chop leftover veggies.
-Toss veggies with a drizzle of olive oil.
-Season with herbs, spices, salt, and pepper.
-Spread on a baking sheet, ensuring they're not overcrowded.
-Roast for 20-25 minutes until tender and slightly caramelized.
