Simple Pine Nut Pesto

Ingredients
  • 4 oz basil
  • ½ tsp salt + more to taste
  • ¼ cup olive oil
  • ¼ cup pine nuts
  • 2 tsp fresh squeezed lemon juice
  • 1 clove garlic
Instructions
  1. Wash basil and remove leaves from stems.
  2. In a food processor add basil leaves, salt, olive oil, pine nuts, garlic, and lemon juice and process until well mixed.
  3. Optional: The fastest method for this pesto is to use raw pine nuts however, you can toast the pine nuts either in the oven or in a pan on your stove before processing.
  4. The same goes for the garlic. Roasted garlic kicks this recipe up a notch.
