Red Thai Curry Veggie Zoodle Bowl

Ingredients
  • 1 zucchini
  • 1 carrot
  • ½ cup peas (leave out for 21 day sugar detox)
  • 1 cup broccoli
  • 1 can full fat coconut milk
  • 3 Tbsp red Thai curry paste (I like Thai Kitchen)
  • 1 red onion
  • 4 Tbsp Thai or regular basil
Instructions
  1. Wash and spiralize zucchini. You can use a julienne slicer or cut by hand if you don't have a spiralizer.
  2. Peel carrot and use a julienne slicer or peeler to slice long strips.
  3. Wash and chop broccoli.
  4. Peel and chop red onion.
  5. Wash and chop basil.
  6. In a pot add coconut milk, curry paste, broccoli and onion. Cook on medium high for 20 min or until veggies are soft.
  7. Lower heat and add zoodles, carrots and peas. Cook on low heat for an additional 5 min.
  8. Serve in bowls topped with basil.
