Rosemary Thyme Chicken

Ingredients
  • 4 chicken breasts
  • ½ container of fresh rosemary and thyme
  • 2 Tbsp ghee
  • 1 Tbsp garlic powder
  • 1 tsp sea salt
Instructions
  1. Melt ghee.
  2. Lay half the rosemary and thyme on the bottom of a baking dish and pour half of the melted ghee over.
  3. Lay chicken breasts down on top of herbs and ghee.
  4. Place the other half of the rosemary and thyme over the top of the chicken.
  5. Pour the remaining melted ghee over the top.
  6. Sprinkle with garlic powder and sea salt.
  7. Cook for 45 min or until internal temp of chicken reaches 165 degrees. Flip the chicken half way though for even browning.
  8. Once chicken is cooked slice and pull out herb stalks. Place chicken pieces back in the pan and toss with the sauce in the bottom of pan to coat all pieces.
Notes
If you are on AIP and don't tolerate ghee replace with olive or avocado oil.
