Arugula Mint Pesto Bites

Ingredients
  • 3 cups arugula leaves
  • ½ cup raw pepitas
  • 2 cloves of garlic
  • ¼ cup olive oil
  • juice from ½ lemon
  • ¼ tsp sea salt + more to taste
  • 1 English cucumbers
  • 4-6 mint sprigs leaves removed
Instructions
  1. Wash arugula, peel garlic cloves and juice lemon.
  2. Place arugula, garlic, pepitas, olive oil, lemon juice and sea salt in a food processor.
  3. Process on high to desired consistency. For this pesto, I wanted it smooth so I processed a little longer.
  4. Wash cucumber and slice rounds that are ⅛" - 14" of an inch thick.
  5. Place a spoonful of the arugula pesto on top of each cucumber slice and top with a mint leaf.
Notes
Use organic whenever possible!
Double or triple this recipe for larger parties.
