White Chocolate Curry Chia Pudding with Vital Proteins Collagen Peptides

Ingredients
  • 2 cups almond milk
  • 2 oz cacao butter
  • 1½ tsp curry powder
  • 2 tsp vanilla extract
  • ½ tsp Ceylon cinnamon
  • 2 tsp Pyure or erythritol (to make keto) or 2 Tbsp maple syrup
  • ⅓ cup chia seeds
  • Optional: 1 can of full fat coconut milk if topping with coconut whipped cream.
Instructions
  1. Mix all ingredients except chia seeds in a small sauce pan over low heat.
  2. Using a whisk mix ingredients until cacao butter is fully melted.
  3. Remove from heat and add chia seeds.
  4. Whisk mixture together vigorously to keep chia seeds from sticking together.
  5. Cool for 10 min, mix once more and then place in the refrigerator for at least 1 hour or until thickened.
  6. When ready to serve mix with a spoon and place in serving dish or 4 bowls. Top with coconut whipped cream, blueberries and a sprinkling of curry powder or Ceylon cinnamon.
  7. Optional Coconut Whipped Cream: scoop cream out of a can of coconut milk ensuring water remains in the can. You may need to refrigerate the can to harden the cream. Whip the cream with a hand mixer. You can add a little sweetener of choice and vanilla if you like but I personally like just the cream.
