Simple Herb Chicken Soup

Ingredients
  • 1 chicken carcass + leftover chicken or chicken removed from the carcass (can use a roasted or rotisserie chicken)
  • 4 carrots peeled and sliced
  • 6 celery stalks chopped
  • 8 cups chicken bone broth + 2 cups of filtered water
  • 8-10 stems of thyme
  • 4-6 stems of rosemary
  • 1 bunch of Italian parsley chopped
  • salt and pepper to taste
  • Noted: additional water may be needed depending on how long the soup simmers
  • Optional: 1 cup of coconut milk
Instructions
  1. In a pot combine all ingredients and bring to a boil.
  2. Once boiling turn down to a simmer and cook for at least an hour. You can cook longer if you prefer but may need to add additional water.
  3. Remove the carcass from the pot and pull the meat off of the bone and then add back to the pot.
  4. Remove the thyme and rosemary stems.
  5. Season with additional salt and pepper if needed.
  6. If you prefer a creamy soup you can add 1 cup of full-fat coconut milk right before serving.
Notes
The longer you cook the soup the more nutrients you will pull from the chicken carcass. I typically cook for 1 to 1.5 hours and find this soup gels nicely when cold which is the sign of gelatin. If yours does not gel that's ok!
