Simple Grain Free Banana Muffins

Ingredients
  • 2 cups blanched almond flour
  • ½ cup tapioca flour
  • 1¼ cup of mashed bananas
  • 2 eggs
  • ¼ cup coconut sugar (can use granulated erythritol monk fruit blend) + extra for topping
  • ¼ cup avocado oil
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 banana for topping
  • 1 tsp cinnamon
  • ¼ tsp salt
Instructions
  1. In a bowl mash bananas with a fork.
  2. Add coconut sugar or erythritol monk fruit blend, eggs, vanilla, avocado oil and mix well.
  3. Add blanched almond flour, tapioca flour, baking soda, cinnamon, and salt.
  4. Mix everything until you have a smooth batter.
  5. Put muffin liners into a muffin pan.
  6. Scoop muffin mix into liners.
  7. Sprinkle coconut sugar on top of each muffin.
  8. Peel and slice banana into coins and place one on top of each muffin.
  9. Bake for 20-25 min at 350 degrees.
  10. Use a knife or toothpick to check the center of muffin for doneness.
  11. Note: If you want larger, taller muffins divide the entire mix into 12 muffins if you want smaller, lower muffins divide into 18.
