Easy Muesli Cookies with Seven Sundays (Gluten Free)

Gluten Free, Refined Sugar Free
Ingredients
  • ¾ cup gluten free flour (I prefer Anthony's)
  • ¼ tsp baking soda
  • ¼ tsp baking powder
  • ½ tsp cinnamon
  • ¾ cup coconut sugar
  • 1 cup/1 stick salted butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1½ cups Seven Sundays Muesli (or muesli of choice)
Instructions
  1. In a bowl add gluten free flour, baking soda, baking powder, and cinnamon and set aside.
  2. In another bowl beat butter, coconut sugar, and vanilla extract together until creamy. Add egg and mix.
  3. Add dry ingredients to wet ingredients and mix well.
  4. Add muesli mix and mix gently.
  5. Scoop even sized portions onto a parchment lined baking sheet. Bake at 350 for 12 min. Allow to cook slightly and transfer to a cooking rack.
Notes
Modifications:
- To make dairy free use coconut oil instead of butter.
- Can sub all or half sugar with a granulated sugar substitute such as Erythritol (I like Lakanto).
- Regular flour can be used instead of gluten free.
